A Trackday on the Nürburgring Nordschleife is a private event where an organiser (normally a specialised company or driving club) will hire the whole Nürburgring on an exclusive basis.
This is different to a Touristenfahrten day, because entry numbers are limited, none-road-legal cars *might* be allowed, and overtaking rules might be different. The quality of driving time is usually much higher, you can drive the full length of the Döttinger Höhe straight, and everybody wears a helmet and attends a driver’s briefing.
